For small game (fox, coyote) lung shots may be enough, but bigger game will need spine, neck bone, heart or brain shots. Use the best scope and try to get within 100m for a clean shot. There's no need to put scopes or ammo in your inventory.
Hold up on the d pad to access the wheel once you add your weapons to your inventory in the pause menu. I'm on PS4, there's definitely a wheel, you can't use hotkeys without a mouse and keyboard so it wouldn't be playable without the wheel. Down on the d pad opens up your dog interaction menu if you have a dog equipped btw.
Because that's only your storage which is used to select equipment you want to add your character's personal storage. To add equipment to your characters loadout you need to access your inventory in the pause menu and select the equipment and its position in your loadout. Don't feel stupid.
Hotkey to switch ammo. I'm always hunting with a shotgun and a bow and I carry birdshot, slugs, 420gr and 600gr arrows.
